Kaweco ink comes in a glass bottle, has good coverage, and is water-soluble. It is also vegan.
To use bottled ink, you need a fountain pen with a convertor. Refilling your pen with bottled ink is more environmentally friendly than using cartridges. And while it can be a bit messy, it is a lovely old-fashioned "slow" process.
